Pizza Time with Chef Robert

Chef Robert is back at it again with another Taste of The Table video! This time he is teaching us how to make some of the new pizza concepts that will be featured at The Table and The Den this year! Check out the video guide and recipes below to make it at home!

Basic Pizza Dough
Makes 2 Pizzas

1 cup Warm Water
1 tablespoon Active Dry Yeast
1 teaspoon Sugar
1 teaspoon Salt
2 tablespoons Olive Oil
3 cups or 15 oz Flour

1. First measure out the ingredients.
2. In a measuring cup, dissolve sugar in the warm water and add the yeast and mix well.
3. Let stand for 5 minutes.
4. Add oil, salt and flour to the mixer bowl.
5. Turn on the mixer with the hook attachment and add the liquid; knead for 10 minutes.
6. Place dough ball in a bowl and coat entire surface with a little oil.
7. Cover loosely with a towel or plastic and let stand in a warm place until doubled in size, about one hour.
8. When the dough has doubled, cut it into 2 equal pieces and re-form into a tight ball.
9. Place each dough ball into another bowl and let rise again.
10. Once the dough ball has doubled in size, it’s ready to knead back together and roll out.

Place pizza stones into the oven and pre heat to 500 degrees –now you are ready to cook some pizza!

Pizza Sauce

¼ cup Extra Virgin Olive Oil
½ cup Onion (small dice)
1/8 cup Garlic (minced)
4 cans Canned Plum Tomatoes with Basil Leaves (San Marzano)
½ cup Basil (roughly chopped)
¼ cup Oregano (roughly chopped) Optional
2 cups Red Wine
Salt and pepper
2 Carrots (chopped)
½ cup Sugar

1. First measure out the ingredients.
2. In a sauce pot, heat the oil on medium heat and add the onions, garlic, carrots and a pinch of salt.
3. After 3-5 minutes add the wine and reduce by half then add the canned tomatoes.
4. Once the tomatoes come to a slight boil reduce heat and simmer for two hours stirring occasionally.
5. Add the basil and oregano and using a stick mixer blend until smooth.
6. Season with salt and pepper “To taste”

California BBQ Chicken Pizza

1 Pizza Dough Recipe

1 Barbeque Sauce
1 roasted Chicken (picked)
1 Red Onion (julienne)
1 bunch Cilantro (picked)
1 bunch Green Onions
Garlic (minced)
Smoked Gouda Cheese (shredded)
Mozzarella Cheese

1. First measure out the ingredients and complete the knife prep in the above procedure.
2. Preheat your oven and stone to 500 degrees.
3. Toss out pizza dough.
4. Spread with BBQ Sauce.
5. Toss the Chicken in BBQ sauce.
6. Layer ingredients and cheese.
7. Bake at 500 degrees on a pizza stone for approx. 5-10 minutes or until golden brown.

Mediterranean Pizza

1 Pizza Dough Recipe
2 cups Pizza Sauce
1 jar Marinated Artichokes
3 tablespoons Roasted Red Peppers (Julienne)
1 Onion (grilled)
1 Bunch Asparagus (sliced)
½ Eggplant (grilled)
1 zucchini (grilled)
Garlic (minced)
Feta Cheese
Mozzarella Cheese

1. First measure out the ingredients and complete the knife prep in the above procedure.
2. Pre-heat your oven and stone to 500 degrees.
3. Toss out pizza dough.
4. Spread with sauce and layer ingredients and cheese.
5. Bake at 500 degrees on a pizza stone for approx. 5-10 minutes or until golden brown.

Focaccia
Makes ½ Sheet

3 oz garlic, thyme, rosemary infused Olive Oil
1 teaspoon fresh ground black pepper
16 oz (235 ml) warm water
14 Grams or 2 packs active dry yeast
2 teaspoon Agave
27.22 oz Bread Flour
1 teaspoon salt
1 teaspoon fresh ground black pepper

MAKE DOUGH

1. In a cold medium skillet, combine olive oil, minced garlic, thyme, rosemary, and the black pepper.

2. Place the pan over low heat and cook, stirring occasionally, 5 to 10 minutes or until aromatic, but before the garlic browns.
3. Strain and set aside.
4. In a mixer bowl, combine the warm water, yeast, and agave. Stir a few times then let sit for 5 minutes.
5. Add 1 cup of the flour and a 2oz of the infused garlic-olive oil mixture to the bowl with yeast and agave. Mix until the flour has moistened. Let sit for another 5 minutes.
6. Mix in the remaining 1 1/2 cups of flour and the salt. Knead for 10 minutes until smooth.
7. Transfer the dough to a large oiled bowl, cover and let rise for 1 hour. (It’s best to let the dough rise in a warmer area of your kitchen).

BAKE BREAD

1. After 1 hour, heat the oven to 450 degrees Fahrenheit.
2. Use ½ oz of the remaining garlic-olive oil mixture to oil a ½ sheet baking sheet.
3. Transfer the dough to the baking sheet then press it down into the pan.
4. Use your fingers to dimple the dough then drizzle the top with the remaining ½ oz of the garlic-olive oil mixture.
5. Let the dough rise for 20 minutes until it puffs slightly.

6. Bake until golden brown, 15 to 20 minutes.
7. Cool baked focaccia bread on a wire rack.
